I downloaded this tonight and started glancing through it. Normally I don't like to cook, mainly because I don't like to eat. I just don't enjoy most food very much. However, I thought I'd give this a try, because I do like some southern food. I checked out a fair number of the recipes, and I've found over a dozen I want to try. Maybe if I like them I'll get a bit more adventurous and try some with less-familiar ingredients. It will probably take me a while to get to the ones I want to try, because cooking is seriously intimidating to me, but at least the recipes sound fairly simple. The cookbooks that take a couple of pages for one recipe are too complicated. I think that's the best thing about the way this book is designed, is that the actual cooking instructions are *not* intimidating. There are even some helpful guides in the back of the book for those of us who aren't that used to cooking, or get easily confused regarding cooking terminology. There's a helpful bit about why so many cooks prefer cast iron cookware.Some of the recipes are variations on familiar things such as meatloaf, and it looks like some of them can be toned down if you don't like chile or peppers. Oh yeah, there's a section giving heat ratings to various popular types of peppers, to give you an idea what you might want to try (or in my case, avoid). I would recommend this for people who like straightforward, basic recipes and explanations, people looking for homemade comfort food, those who might want to try something really different if they're not used to southern or southwestern cooking, or even if you just want a lot of new recipes to try. I have to say, a lot of the recipes look very creative! The price is far more reasonable than most of the cookbooks I've bought. I have quite a few, in a frustrating attempt to find recipes to my taste, and I really think this one has more appealing recipes than any other that I've seen.Some examples that look good are: Molasses Breakfast Cake (you had me at "breakfast cake"!), Cheez-It chicken (brilliant idea!), Dill-icious Pork Roast, Zesty Parmesan Potatoes, homemade pickles (!seriously?!), Johnnycakes circa 1840, Chocolate Snap Cake, Spiced Cider. Those are just some of the ones that appealed to me, but there are many, many more to choose from.

...just by browsing through it. What I really like is that it's a widespread collection - you get breakfast recipes, appetizers, salsa, soups, seafood, beef, breads and much more. And every recipe is been cooked and approved by the author himself, a fact I really appreciate. Therefore the instructions are easy to follow, even if you are only moderately experienced like me.The book also includes guides - helpful essays about e.g. the different kinds of salt or the heat units of peppers. And a dictionary of cooking terms and spice flavors which I personally found very helpful.All in all, a great collection. Highly recommended!
